Question about making funnel cake?

I want to make funnel cake for my class' potluck party next Thursday. The class starts at 2 PM, but I have another class before that from 11 AM-2 PM so I don't know when I'd have time to make it. Will the funnel cake still taste good at 2 PM if I make it the night before, or no? Will it even still be good if I make it the morning of, or is it only good if it's freshly fried and hot?
